Who doesn't love coffee cake and banana nut bread. Both of these desserts have always been my favorites. When I became vegan, I wanted to challenge myself to be more creative and that's when I said to myself one day, I was going to take two of my favorite desserts and make them one. I truly wanted this dessert to be one of a kind, so I took my traditional coffee cake recipe and merged my banana nut bread added a cream cheese frosting with bananas and walnuts and a star was born. Vegan Banana Nut Coffee Cake
Ingredients
1 cup spelt flour
1/2 cup pastry flour
3/4 cup brown sugar
1/2 teaspoon pink salt
1 teaspoon baking soda
1teaspoon vanilla extract
1 teaspoon apple cider vinegar
1 tablespoon aquafaba (chickpea liquid)
1/4 cup avocado oil & 2 tbsp
1 cup almond milk
1 ripe banana
1 tablespoon cinnamon
6 tablespoons avocado oil or plant based butter
1 cup brown sugar
1 cup spelt flour
1/2 lime squeezed
Cream Cheese Frosting Recipe
1 cup powdered sugar
2 oz vegan cream-cheese
2-3 tablespoons of vegan butter or avocado oil
1 teaspoon vanilla extract
2-3 tablespoon mashed banana
walnuts add as many as you like
Follow Directions Step by Step
Preheat oven to 350°F
In a small bowl mash 1 ripe banana, cream the avocado oil or vegan butter, sugars and vanilla extract, aquafaba and apple cider vinegar until light and fluffy. Put to the side.
Now take a large bowl and add you spelt and pastry flour with your salt and baking soda to thoroughly mixed. Now add your banana mixture you set to the side once that is mixed in add your almond milk. Set that to the side.
Now for your crumb mixture take a bowl and add your cinnamon, butter, brown sugar, spelt and lime juice until you get a mixture the resembles.
I used a bundt pan any pan that is nonstick will do. Add half of the cake batter to pan and layer inside with crumb topping. Once fully covered add the remaining cake mixture over crumbs and then cover top of the mixture with more crumb mixture.
Place in oven for 32-36 minutes.
While cake is in oven take a bowl for your frosting and add cream-cheese, powdered sugar, avocado oil, vanilla, banana and walnuts. Consistency should be able to drip off of spoon.
Use a toothpick to check cake stick in middle if toothpick comes out clean cake is done.
Once cake is removed let it cool for 20 mins
Add frosting on top and enjoy!!!
